Stanley Tucci: Searching for Italy and Tucci in Italy were the atlas’s main inspiration. The dishes shown in Italy shaped the catalog and set the research in motion. Italy by Plate is independent and unaffiliated with either series.
Choosing dishes
Every entry is a prepared dish clearly shown on screen in Italy, with an established regional or community tradition. Drinks, standalone products, contemporary fusion, and chef inventions without a traditional basis are excluded.
The recipes
Research starts with Italian-language sources, favoring regional food authorities and cooks with local standing, alongside established publications. Several sources are compared, and each recipe follows one coherent regional tradition. Where a television version differs from a recognized regional standard, the standard guides the recipe. Kitchen notes explain unfamiliar ingredients and distinctions that matter in an American kitchen. The aim is a recipe a cook from its home region would recognize.
